Justin Palko grew up in Melbourne, FL, and has been a dedicated member of the Tavernetta team since 2021. From the start, he made his mark by excelling at every station — a testament to his passion for the culinary arts and his relentless commitment to craft. His leadership on the line earned him the role of Tournant before his promotion to Sous Chef in 2024.
With nearly a decade of experience in professional kitchens, Justin's philosophy is as straightforward as it is effective: "Put your head down and always be doing something." That drive has shaped not only his own growth, but the development of the cooks he mentors. For Justin, one of the greatest rewards of his role is watching the people around him improve and come into their own.
