Our Tastemaker Dinner series is designed to capture that same spirit: one table, a shared evening, and a sense of true connection. Each menu is crafted with the terroir in mind—because if it grows together, it goes together—creating a night where exceptional wines, thoughtful cooking, and genuine hospitality transport guests to the heart of each region.
About I Fabbri
The Casole estate in the heights of Lamole has been in the Grassi family since the 1600s. A banking family by trade, the Grassis sold their grapes for generations until the end of Mezzadria (the Italian sharecropping system) in the late 1960s, when Giuliano Grassi made the decision to estate-bottle wine. His daughter Susanna eventually took over, bringing I Fabbri into the limelight of Chianti Classico greatness. No producer is more historic or more representative of the Lamolese aesthetic: the wines are floral, gutsy, and entirely transporting — shaped by Lamole's high-altitude terraced vineyards, sandy soils, and a landscape so blanketed in iris flowers that their perfume inoculates the wines with a florality that is entirely its own.
Tavernetta is thrilled to welcome the next generation of I Fabbri to Colorado: Susanna Grassi's son Vittorio, making his first visit to join a Tastemaker dinner at Tavernetta — to tell the story of I Fabbri, and of one of Chianti Classico's most singular and storied villages..
